Bliss in a jar: my creamy cashew dressing (that goes on everything)

If you've been following along, you know I love a good sauce. And this one? It's a staple in my kitchen. Creamy, tangy, and utterly versatile, this cashew dressing has transformed countless meals from "meh" to "more, please!"


Whether drizzled over roasted veggies, tossed into a nourish bowl, or used as a dip for crunchy crudités, it's the kind of recipe that makes healthy eating feel indulgent.


Why cashews?

Cashews are not only deliciously creamy when blended, but they're also packed with healthy fats, protein, and essential minerals like magnesium and zinc. Plus, when soaked and blended, they create a luscious base without the need for dairy or oil.

Creamy cashew dressing recipe

This recipe yields approximately 1 cup of creamy cashew dressing, depending on how much water you add for your desired consistency.


Ingredients:

  • 1 cup raw cashews (soaked for at least 2 hours or overnight)

  • 1/2 cup water (plus more for desired consistency)

  • 2 tbsp. lemon juice

  • 1 tbsp. apple cider vinegar

  • 1 clove garlic

  • 1 tsp. Dijon mustard

  • 1/2 tsp. sea salt

  • Freshly ground black pepper, to taste


Optional add-ins:

  • Fresh herbs (like dill, parsley, or basil)

  • Nutritional yeast for a cheesy flavour

  • A pinch of cayenne pepper for heat


Instructions:

  1. Drain and rinse the soaked cashews.

  2. In a high-speed blender, combine all ingredients.

  3. Blend until smooth and creamy, adding more water as needed to reach your desired consistency.

  4. Taste and adjust seasonings as desired.


Store in an airtight container in the refrigerator for up to a week. It may thicken over time; simply stir in a bit of water to loosen. This amount is usually enough for 4-6 salad servings if used as a drizzle, 3-4 grain bowls, or as a dip for a group of 2-4 people.


Serving suggestions:

  • Drizzle over grain bowls or salads.

  • Use as a dip for fresh veggies or roasted sweet potato wedges.

  • Spread on sandwiches or wraps.

  • Toss with cooked pasta for a quick, creamy sauce.
