Are you stuck for ideas for breakfast? Do you tend to have the same thing again and again? Have you ever tried savoury porridge? No? If you fancy a bit of a different breakfast, why not try the following recipe?
Also, porridge is a really healthy breakfast option, as oats are very nutritious and filling. Did you know that in half a cup of oats there are 13 grams of protein, and 20% of the reference daily intake (RDI) of both iron and zinc?
It doesn't always have to be sweet! This recipe provides 2 servings.
3-4 cups plant milk of choice
2 tsp. fresh lemon juice
4 cups fresh spinach
1/4 tsp. sea salt
1/2 tsp. garlic powder
1 tsp. oil to sauté (can be omitted)
1 cup rolled oats
Mix the lemon juice and plant milk. Set aside.
Sauté the spinach with the salt and garlic powder using the oil (or a little water if omitting the oil), until slightly wilted.
Add in the plant milk mixture and the oats. Stir until thick and you've reached your desired consistency. Add water if needed.
If you have vegan parmesan you might want to add some on top. A generous sprinkle of nutritional yeast also adds great flavour and texture. Another delicious topping option is tomato compote.
